Slow Cooker Cashew Chicken
Ingredients:
8 boneless Chicken Breasts
1/4 cup all purpose flour
1/2 tsp black pepper
3 Tbsp canola oil
3/4 cup soy sauce
6 Tbsp rice wine vinegar
6 Tbsp ketchup
3 Tbsp brown sugar
3 Tsp garlic minced
1 1/2 tsp grated fresh ginger
3/4 tsp red pepper flakes
1 1/2 cup cashews or peanuts
Directions:
Cut Chicken into Bite size cubes. Place chicken in slow cooker.
Combine flour, pepper, oil,soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl;
pour over chicken, and stir until chicken is coated with sauce.
Cook on LOW for 3 to 4 hours.
Add cashews and stir. Serve over rice. Makes 6-8 servings.
You will have to stir it and may have to add water because the sauce gets too thick
(when I made it I left out the red pepper flakes and fresh ginger)
